Laundry Hag's Superman Sized Pumpkin Roll Recipe # 11

I've had quite a few family things going on this holiday season, so I've asked the Laundry Hag, Maggie Phillips, to post a blog in my absence. Thanks for all the well wishes and prayers, A.J is doing much better!
Here's what we make in the Phillips's household every holiday as a desert that will feed any group of guests be they the in-laws or a ragtag group of wayward SEAL's. Careful though, it only lasts about a week and I know from experience downing one of these alone is a recipe for bigger pants! A modified Libby's recipe turned superman sized!
Superman Sized Pumpkin Roll
INGREDIENTS:
• 6 eggs
• 2 cup white sugar
• 1 and 1/2 cup solid pack pumpkin puree (I use fresh but canned works)
• 1 1/2 cup all-purpose flour
• 2 teaspoon baking powder
• 1 teaspoon salt
• 2 tablespoons ground cinnamon
• 2 teaspoon ground ginger
• confectioners' sugar for dusting
• 2 (8 ounce) package cream cheese (Again I use the Neufchatel)
• 8 tablespoons butter
• 2 cup confectioners' sugar
• 1 teaspoon vanilla extract

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 13x18 inch jellyroll pan.(Or big cookie sheet) In a large bowl, beat eggs and sugar with an electric mixer on high speed for five minutes. Gradually mix in pumpkin and lemon juice. Combine the flour, baking powder, salt, cinnamon, and ginger; stir into the pumpkin mixture. Spread batter evenly into the prepared pan. Sprinkle pecans over the top of the batter.
Bake for 12 to 15 minutes, or until the center springs back when touched. Loosen edges with a knife. Turn out on two dishtowels that have been dusted with confectioners' sugar. Roll up cake using towels, and let cool for about 20 minutes.
In a medium bowl, combine cream cheese, butter, 2 cup confectioners' sugar, and vanilla. Beat until smooth. Unroll pumpkin cake when cool, waxed paper, and dust with confectioners' sugar. Wrap cake in waxed paper, and twist ends of waxed paper like a candy wrapper. Refrigerate overnight. Serve chilled; before slicing, dust with additional confectioners' sugar.
